Homemade honeycomb is delicious. Add a generous drizzle of melted chocolate and it's utterly delectable! Luckily, it's super easy (and fun) to make.
INGREDIENTS
1 1/3 cups raw caster sugar (raw caster bumps up the caramel flavour)
2 tbsp golden syrup
2 tbsp honey
2 tbsp water
3 tsp bicarb soda
100g milk chocolate
100g 70% dark chocolate (mixing milk & dark chocolate makes it a little richer without being overpowering)
Equipment
23cm square cake tin
Baking paper
Large, high-sided saucepan
Metal spoon
Fine sieve
Whisk
Microwave-safe jug or bowl
METHOD
Line cake tin with baking paper.
Place sugar, golden syrup, honey and water in saucepan over medium heat. Bring mixture to the boil for 10 mins or until beginning to darken in colour, stirring occasionally. Turn heat off.
Working quickly, sieve bicarb into mixture and whisk well to combine. (Mix will double in size.)
Pour into lined tin and set aside for 2 hrs to cool and harden. When honeycomb has set, remove baking paper and break into bite-size pieces. Place onto clean sheet
of baking paper.
Break chocolate and place in jug or bowl. Pop in the microwave on medium heat for 1 min. Stir and continue to heat in 30-sec intervals until melted, stirring in between.
Drizzle generous spoonfuls of melted chocolate over honeycomb pieces and allow to set.
Serve
Enjoy homemade honeycomb as a sweet snack or serve with ice-cream for an extra-indulgent dessert. Yum!
