Real Living recipe for triple chocolate cherry cakes.
180g dark chocolate (45% cocoa), chopped
½ cup cream
30g butter, chopped
150g butter, chopped
120g dark chocolate (45% cocoa)
1/3 cup milk
1 cup self-raising flour
¼ cup cocoa powder
1 cup brown sugar
1½ tsp vanilla extract
425g tin of black cherries in syrup, drained
2/3 cup thickened cream
Dark chocolate shavings, to serve
Vegie peeler (to make chocolate shavings)
2 microwave-safe jugs or bowls
12 x ½ cup capacity muffin tin
Large mixing bowl
Small mixing bowl
Medium mixing bowl
Electric beaters or whisk
Place chocolate, cream and butter in microwave-safe jug or bowl. Heat on medium power for 2 to 2½ mins until just melted, stirring halfway through (see "Tips"). Stir well to combine and refrigerate while you prepare cakes.
Preheat oven to 190°C (170°C fan). Line bases of muffin tray with paper cases.
Place butter, chocolate and milk in microwave-safe jug or bowl. Heat in microwave for 2½ mins on medium power, stirring halfway through, until just melted but not hot.
Sieve flour, cocoa and sugar together into large mixing bowl. Using fork, whisk eggs and vanilla together in small mixing bowl.
Create a well in centre of flour mixture and pour in chocolate mix and whisked eggs. Stir until just combined. Tumble in cherries and stir to combine. Spoon mixture into paper cases and bake for 25 to 30 mins. Remove from
oven and cool completely.
Whip cream in medium bowl using electric beaters or whisk. Spread ganache over cakes creating a raised rim to hold in cream. Top each cake with a dollop of whipped cream and sprinkle with chocolate shavings.
Timings are based on a 1000W microwave. If the ganache becomes too solid, simply leave it at room temperature or microwave on medium power for 30 to 60 secs until spreadable, and stir until smooth. You can make the cakes and ganache a day ahead, but don't ice or top with cream until ready to serve.
